Wine Cellar
Wine-making is the transformation of grapes in wine.  It begins with the removal of grape stalks, the wine pressing and the alcohol fermentation, a chemical process by which sugar is transformed into alcohol and during which aromatic substances which characterize the scent of wine, develop.  The mark (peels and seeds) soak in the must for a specified period of time without grape stalks, which would give a strong astringent note.  For prestigious wines, the pressing is done delicately:  the more the mark soaks in the must, the more intense will be the extraction of color and aromas.
